Janelle showed me how to use a blog!! (in psychology)

Oh my goodness! This is awesome! I'm sitting here looking at a slide show about robust correlations (...?), AND writing my first ever blog post! :) Plus! Last night I learned that you can text your own email! So, I didn't have to buy that cord at the verison store afterall... but I don't even care, because I have my phone pictures now. I'm not so hot with technology I guess.

BUT. I have a great story. Me and my two roommates Joy and Kara needed to drop of invitations for our FHE halloween party last night, and it was very cold outside. So, we put on every single solitary scarf we owned! And let me tell you... our FHE brothers thought we were crazy. Funny thing about scarves though- they don't keep you warm if you don't wear a jacket. Oh well.

Just a couple other things... (I should probably listen to prof lloyd)
1: I accidentally called the police
2: You should all try racing office chairs across bubble wrap
3: I realized the other night that the only food I had was cookies and carrots. Don't worry, I went shopping.
4: I made my first roast last night!! yum.
5: My roommate sleep talks! (like... not just a little bit).

Red Velvet Cookie recipe

A few of you have recently partaken of my fabulously amazing Red Velvet Cookies, and I've had a couple requests for the recipe. So, out of the goodness of my heart, I decided to post it online for all of you!!

Isabelle's Red Velvet Cookies
  • 2 ounces unsweetened baking chocolate
  • 1/2 cup (1 stick) butter, at room temp.
  • 2/3 cup brown sugar
  • 1/3 cup white (granulated) sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 tablespoon red food coloring
  • 3/4 cup sour cream (when I wrote this recipe down, I put "sour scream"...haha)
  • 2 cups flour
  • 1 cup semi-sweet or milk chocolate chips (whatever floats your boat)
  1. Preheat oven to 375 degrees. Line 1-3 cookie sheets (depending on how many you have and how many batches you're doing) with parchment paper.*
  2. Melt baking chocolate in the microwave (it takes mine about 90 seconds). Stir until smooth and set aside to cool down a bit.
  3. Combine butter, sugar, and brown sugar in the mixer**. Beat on medium speed until smooth. Add baking soda and salt, beat on medium until incorporated.
  4. Add the egg, beat until smooth (NO lumps!!). Add red food coloring, beat until the batter looks red (about 3o seconds).
  5. Scrape the bowl down, add melted baking chocolate and mix well.
  6. Scrape the bowl down again, add half the flour (which would be 1 cup). Mix in the sour cream. Then add the rest of the flour.
  7. Beat it until everything is all nice and mixed up. It will be wet and sticky and heavy.
  8. Mix in chocolate chips by hand.
  9. Bake at 375 degrees for 9-11 minutes, until they rise and are firm. They will not change color because of the food coloring. Be careful not to overbake--they should be very soft when you take them out (they will firm up as they cool). Put them on a rack to cool and then frost them with this...
Cream Cheese Frosting
  • 1/4 cup butter, softened
  • 4 ounces cream cheese, softened
  • 1/2 teaspoon vanilla
  • 2.5 cups*** powdered sugar
Mix cream cheese, butter, and vanilla together. If you had to warm them up, stick the mixture in the fridge until cool. Add powdered sugar in half-cup increments. Frost the cooled cookies.

Makes 3 dozen amazing cookies. Both the dough and baked cookies freeze well (but not frosted). Store in the fridge if it is hot, otherwise your frosting will melt. Everyone always loves these, be forewarned you cannot eat "just one", you will end up eating 10.

*Do not use wax paper. Whatever anyone says, your cookies will taste waxy.
**Do not eat the butter/sugar/brown sugar mixture. If you eat "just a little bit", you will be like me and eat loads of it, and then you will throw off the ratios of the cookies.
***Sometimes I only use 2 cups of powdered sugar. For some reason it depends on the day. You can stop adding at 2 cups if the frosting tastes good to you and is nice and thick but spreadable...about the consistency of soft butter.

The joys of college!

Girls, I can't wait to hear everyone's adventurous summer lives! I just want to tell you a tiny bit about mine...
BYU Idaho is amazing. I would suggest it to anyone and everyone... except you all are going places BUT I love it. The carefree, stay up into all hours of the morning, eat crap, and get sick is the best thing for right now! My roommates are so fantastic. We're all freshman... actually the only freshman in our ward.We laugh at almost any and everything that happens in our little apartment. All the girls in our ward are 19+ and all the boys are RMSSSS!!! It's amazing the maturity in boys after their missions. We have an FHE group of boys that we hang out almost nightly with, if it were water fights, bowling, making dinner, dancing, and making homemade fries. Our most recent favorite activity with them is sling shot paint balling! Seriously if you guys are ever bored, go to walmart, get a sling shot for $5.67, painballs and go bonkers! There's also a game we've played since sunday called NINJA DESTRUCTION!!! So we all have to start in a ninja position and the goal of the game is to get the player out by choping someones hand. Once you chop, your hand has to stay in this position. So it was only myself and my FHE brother Cyrus playing. He happened to have his hand right above his buttocks... I had no option but to attempt to karate chop his hand and miss his bum. So I go in for the chop, over swung and gave him a nice little slap on the bum! Definitely one of the greater moments of life. For the boy aspect of life... There's a boy named Seth in my english class that asked me on a date the second day i'd met him. He's super fun but very touchy. I've decided it best to stay friends with him for a while but i'll keep updates. NOW YOUR TURN! =) I love you girls!

yay meg!

Thanks for doing this, Meg! I hope all of you girls contribute so I know what's going on in your lives!

Here's a little update from me: I went from having no jobs (well, not counting ChaCha, which doesn't really count) to having 3! I am now:
  1. The BYU Animal Caretaker (meaning I feed lab rats and pidgeons and things),
  2. A BYU Typewell Transcriptionist (I go to class with deaf kids and type up the lectures, which are transferred realtime to their computers), and
  3. A BYU Art Model. Yes, I am going to stand in front of art classes in a bikini, and be drawn. Don't worry, its ethical, I checked.
Yay! I am very excited about the wonderful thing called income! I hope I see you guys soon.
